It is really winter in London now and so cooooold outside today, even with the lovely sunshine! It will be dark in about an hour and half or so, and I’m tucked up indoors, nice and warm, while tackling my admin.
I have had such a great response from family and friends to this lovely warming soup recently, so I thought I would share it with you… It’s one of my all time favourites, so do let me know how you get on with it…
Sistahintheraw’s Sweet Potato Coconut Winter Soup
1 medium sweet potato, peeled and chopped into chunks (leave skin on if organic)
2 carrots, peeled and chopped into chunks (leave skin on if organic)
10 pieces sun dried tomatoes, soaked (keep soak water)
1 date, seed removed and soaked
1 tbsp of organic dried coconut or 1/2 cup fresh coconut meat
1/4 scotch bonnet chili pepper, chopped seeds removed
Juice 1/2 lime
several sprigs coriander (cilantro)
1 tbsp organic cold pressed olive oil
pinch curry powder
1/2 tsp turmeric
2-3 cups water depending on desired consistency
Topping: chopped coriander (cilantro), optional
Do this: Place carrots, sweet potato, coriander (cilantro) and soak water from the tomatoes in a blender and process until combined. Then add remaining ingredients and process until soup is nicely smooth. In winter, I either keep blending for several minutes using a high speed blender, or I place soup in warmed soup bowls and put in the dehydrator until soup is warm; or I briefly warm the soup gently in a sauce pan (but do not allow to come to a boil). Sprinkle with chopped coriander (cilantro) and enjoy with raw crackers!
